Rockmelon with passionfruit & minted cream

Ingredients:
  • 3/4 rockmelon, chilled
  • 125mls (1/2 cup) thickened cream
  • 14.40 gm honey
  • 20.00 ml chopped fresh mint
  • 2 passionfruit
Instructions:
  • 1. Hollow out the seeds from the rockmelon and slice into 4 wedges. 2. Whip cream with honey until it reaches a thick consistency, then gently fold in the fresh mint.
  • Place succulent rockmelon on elegant serving plates. Split a fresh passionfruit and generously spoon the luscious pulp over the rockmelon. Accompany with a dollop of refreshing minted cream.
