Sparkling wine fruit salad with passionfruit yoghurt

Enjoy the exquisite flavors of summer fruits paired with sparkling wine.
Ingredients:
  • 300g rockmelon, peeled, deseeded, coarsely chopped
  • 300g papaya, peeled, deseeded, coarsely chopped
  • 2 peaches, halved, stones removed, cut into thin wedges
  • 125ml (1/2 cup) sparkling wine
  • 17.20 gm demerara sugar
  • Passionfruit yoghurt, to serve
  • 40.00 ml shredded fresh mint
Instructions:
  • In a large bowl, mix together the rockmelon, papaya, peach, wine, and sugar. Let it sit for 10 minutes to enhance the flavors.
  • Spoon the rockmelon mixture into serving glasses. Add a dollop of passionfruit yoghurt on top and garnish with fresh mint. Serve right away.
