Transform your outdoor space into a stylish cocktail bar for a sunset soirée with friends featuring refreshing fruit cocktails.
Ingredients:
  • 500g fresh raspberries or frozen raspberries
  • 2 sprigs fresh thyme
  • 80ml (1/3 cup) brandy
  • 1 x 750ml btl chilled sparkling wine
Instructions:
  • Set aside 20 raspberries. In a saucepan over low heat, combine the rest of the raspberries, sugar, and thyme sprigs. Simmer covered for 3 minutes until the raspberries collapse. Strain through a fine sieve into a bowl, pressing gently with a spoon. Discard the pulp and let the syrup cool. Chill in the fridge for 1 hour.
  • Pour the raspberry syrup, reserved raspberries, and brandy into chilled serving glasses, and then fill them up with sparkling wine.
