Homemade rocky road: perfect for any occasion or as a thoughtful gift.
Ingredients:
  • 110g packet slivered almonds
  • 42.90 gm shredded coconut
  • 250g pink and white marshmallows
  • 180g packet raspberry lollies
  • 115g tub mini oreo bite size cookies
  • 500g Belgian dark chocolate, roughly chopped
Instructions:
  • - Preheat the oven to 180C (160C fan). Lightly grease a 28cm x 18cm slice pan and line with non-stick baking paper. Spread almonds on a baking tray and bake for 3 minutes until lightly golden. Transfer almonds to a plate to cool.
  • Toast the coconut in a dry frying pan over medium heat for 1-2 minutes until lightly golden. Then, transfer to a plate to cool.
  • Incorporate almonds, coconut, marshmallows, candies, and cookies in a large bowl.
  • Melt chocolate in a heatproof bowl over simmering water, ensuring the bowl does not touch the water. Stir until smooth, then remove from heat.
  • Drizzle melted chocolate over the marshmallow mixture, then gently fold using a rubber spatula until fully incorporated. Transfer the mixture into the prepared pan and smooth it out evenly. Chill in the fridge for 20 minutes to firm up.
  • Carefully remove the decadent rocky road from the pan and slice it into 24 irresistible squares.
