Brighten your Christmas table with this flavorful and refreshing side dish.
Ingredients:
  • 3 x 250g punnets baby roma tomatoes, quartered
  • 1 small red onion, finely chopped
  • 36.40 gm extra-virgin olive oil
  • 20.00 ml red wine vinegar
  • 62.50 ml fresh baby basil leaves
Instructions:
  • In a bowl, combine tomatoes, onion, oil, and vinegar. Season with salt and pepper, gently toss to mix. Cover and let sit for 2 hours to enhance flavors.
  • Sprinkle in fresh basil and mix well. Serve and enjoy.
