Indulge in the tangy sweetness of sour cherries blended with eggs, lemon zest, and vanilla in a classic Romanian cake.
Ingredients:
  • 5 eggs, separated
  • 1.25 cups superfine sugar
  • 5 tablespoons sunflower seed oil
  • 2 cups all-purpose flour
  • 1 lemon, zested
  • 0.5 teaspoon vanilla extract, or more to taste
  • 2.25 cups pitted sour cherries
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously grease an 8x16-inch cake pan.
  • Whisk egg whites in a bowl until foamy, gradually adding sugar as you keep whisking.
  • Combine the yolks and oil in a bowl, blending until smooth.
  • Combine the yolk mixture with the egg whites in a bowl. Stir in lemon zest and vanilla extract. Mix for an additional 3 minutes. Gently fold in flour using a tablespoon. Transfer batter into the prepared pan and evenly distribute cherries on top.
  • Bake in the preheated oven until the crust turns golden brown, about 40 to 60 minutes. Let the cake sit in the turned-off oven with the door closed for 30 minutes. Cool before serving.
