Tender BBQ beef cooked in root beer, perfect for a hearty dinner sandwich.
Ingredients:
  • 1 boneless beef rump roast (4 lb)
  • 2 cups barbecue sauce
  • 1 cup root beer
  • Dash salt and pepper, if desired
  • 16 sandwich buns, split
Instructions:
  • Place the beef in a 3 1/2- to 4-quart slow cooker. In a 4-cup measuring cup or bowl, combine 1 1/2 cups of barbecue sauce with the root beer and pour the mixture over the beef.
  • Cover and simmer on Low heat for 10 to 12 hours until perfectly cooked.
  • 1. Twenty minutes before serving, take the beef out of the slow cooker and place it on a large plate. Pour the cooking juices from the slow cooker into a 12-inch skillet. Cook over medium-high heat for about 15 minutes, stirring occasionally, until the juices have thickened and reduced to approximately 3 cups. While the juices are reducing, shred the beef using two forks and then add it back to the slow cooker.
  • Combine the 1/2 cup of barbecue sauce with the reduced juices in the skillet, then pour this flavorful mixture over the shredded beef in the slow cooker. Season with salt and pepper to your liking, and generously fill each bun with about 1/2 cup of the delicious beef mixture.
