Rose Hip Freezer Jam

Fresh and sweet jam with uncooked rose hips for a vibrant rosy-orange color. Choose wild or pesticide-free rugosa rose hips for best results.
Ingredients:
  • 1 cup trimmed and seeded rose hips
  • 0.75 cup water
  • 3 tablespoons lemon juice
  • 2 cups sugar
  • 1 (1.75 ounce) package powdered fruit pectin
Instructions:
  • Combine the prepared rose hips, water, and lemon juice in a blender and blend for about 15 seconds until smooth, it's okay if there are small bits of rose hip skin. With the blender running, slowly pour in the sugar and continue blending for about 30 seconds until the sugar is dissolved.
  • Combine the pectin and 3/4 cup water in a saucepan and bring it to a vigorous boil for 1 minute. Carefully pour this mixture into the rose hip mixture and blend for 30 seconds.
  • Transfer the mixture into small, airtight containers. Refrigerate. Alternatively, freeze any unused jam for up to a year to preserve its freshness.
