Rose Hip Jelly

Foraged wild rose hip jelly: a deliciously distinctive spread.
Ingredients:
  • 2 quarts rose hips
  • 6 cups water
  • 1/2 cup fresh squeezed lemon juice
  • 1 package SureJell pectin
  • 1/4 teaspoon butter
  • 3 1/2 cups sugar
Instructions:
  • Prepare the rose hips by giving them a thorough rinse, then trim and discard the scraggly ends.
  • Infuse the rose hips: In a large non-reactive pot, combine the rose hips with 6 cups of water. Bring to a gentle boil, then simmer covered for at least 1 hour until the rose hips are tender and easily mashed.
  • Mash and strain the rose hips: Use a potato masher to crush the rose hips into a rough purée. Set up a jelly bag, fine mesh strainer, or 4 layers of cheesecloth over a bowl or pot. Transfer the purée into the bag/strainer/cheesecloth and let it strain for at least an hour. Squeeze the bag or cheesecloth to extract more juice.
  • Get your 5 to 6 half-pint canning jars and lids ready. Sterilize the jars with your preferred method and wash the lids in hot, soapy water.
  • Measure out 3 cups of juice for the recipe. Add more water if you have less than 3 cups. You can also add boiling water to the jelly bag to extract more liquid.
  • To prepare the jelly, start by combining 3 cups of rose hip juice with lemon juice and pectin in a large pot. Bring the mixture to a boil until the pectin is fully dissolved. Next, stir in the sugar until it dissolves, then add butter. Let it reach a hard boil (one that can't be reduced by stirring), and allow it to bubble up. Boil the mixture for precisely 1 minute.
  • Prepare jelly for canning: Remove the pot from heat, pour it carefully into hot canning jars, leaving 1/4-inch headspace. Wipe any spills on the rim with a damp paper towel. Secure clean lids on jars fingertip-tight. Process in a water bath for 10 minutes by placing jars on a rack in a large pot with 1 inch of boiling water. After boiling, cool the jars until you hear a popping sound to indicate sealed lids. Refrigerate any unsealed jars.
