Rose Water Gelees

Elegant rose water gelees, a delightful twist on Turkish delight, perfect for gifting.
Ingredients:
  • 1 teaspoon vegetable oil, or to taste
  • 1.6666667461395 cups cold water, divided
  • 7 teaspoons unflavored gelatin
  • 2.3333332538605 cups white sugar
  • 3 tablespoons strained fresh lemon juice
  • 4 teaspoons rose water
  • 2 drops red food coloring
  • 1 tablespoon cornstarch, or as needed
Instructions:
  • Coat an 8-inch square pan with vegetable oil for a perfectly non-stick finish.
  • In a small bowl, pour 2/3 cup of water. Sprinkle gelatin over the water and allow it to soften for approximately 15 minutes.
  • In a saucepan over medium heat, mix 1 cup of water with sugar and lemon juice. Bring to a boil while stirring until sugar dissolves. Increase heat and let the syrup boil, covered, for 3 minutes.
  • Uncover the saucepan and clip on a candy thermometer; cook the syrup until it reaches 238 degrees F (114 degrees C), approximately 5 minutes. Take the saucepan off the heat and gently whisk in the gelatin mixture until fully dissolved. Stir in the rose water and red food coloring.
  • Pour the syrup into the greased pan and allow it to set at room temperature until it gels, approximately 4 hours. Cover with plastic wrap and refrigerate for 8 hours or overnight.
  • Cut the set mixture into 1-inch squares and sprinkle with cornstarch.
