Create a mouthwatering roast lamb with just a handful of ingredients.
Ingredients:
  • 2.5kg lamb leg roast, at room temperature
  • 2 garlic cloves, thinly sliced
  • 1 lemon, rind finely grated, juiced
  • 60ml (1/4 cup) extra virgin olive oil
  • 20.00 ml dried oregano leaves
  • 5 fresh rosemary sprigs, leaves removed
Instructions:
  • Preheat your oven to 180°C. Make 15 slits, each 1 cm deep and 2 cm long, on the top of the lamb and insert a garlic piece into each one.
  • Place the lamb in a roasting pan and drizzle with a mixture of lemon juice and 2 tablespoons of oil. Sprinkle with oregano for added flavor.
  • Mix the rosemary leaves and lemon rind in a bowl. Press onto the lamb and season with salt and pepper. Drizzle with remaining oil. Roast for 1 hour and 45 minutes for medium doneness or to your preference. Cover with foil and let it rest for 10 minutes before carving.
