Swedish rosette cookies: delicate batter fried to a crisp perfection, adorned with powdered sugar for a festive touch.
Ingredients:
  • 2 large eggs
  • 1 tablespoon white sugar
  • 1 cup sifted all-purpose flour
  • 1 cup milk
  • vegetable oil for frying
  • confectioners' sugar for dusting
Instructions:
  • Prepare all the ingredients.
  • In a large bowl, whisk eggs, sugar, and salt until fluffy. Stir in flour, milk, and vanilla extract until the batter is silky smooth.
  • Heat oil in a large deep skillet until it reaches 375 degrees F (190 degrees C), then set up a wire rack over paper towels.
  • Preheat the rosette iron in hot oil for 2 minutes. Remove the iron allowing excess oil to drip off. Dip the iron into batter, filling it to 1/4 inch from the top, then submerge the iron into hot oil.
  • Deep-fry the rosette in hot oil until it turns golden brown, which should take around 30 seconds.
  • Remove the iron and invert to let any excess drip off. Utilize a fork to release the rosette from the iron onto the set wire rack.
  • Heat the iron in hot oil for 1 minute to ensure it's piping hot, then cook the remaining batter. Finish off by sprinkling the rosettes with confectioners' sugar for a delightful touch.
