Impress with piped sweet potato rosettes, perfect with turkey, ham, or pork.
Ingredients:
  • 3 large (about 2 pounds) sweet potatoes, peeled and cut into 1-inch pieces
  • 1/4 cup butter or margarine, softened
  • 2 tablespoons packed brown sugar
  • 1/2 teaspoon grated orange peel
  • 1/4 teaspoon ground cardamom
  • 2 eggs, beaten
  • 1 tablespoon butter or margarine, melted
  • 2 tablespoons chopped crystallized ginger, if desired
Instructions:
  • In a 3-quart saucepan, cover sweet potatoes with water. Bring to a boil, then simmer covered for about 20 minutes until tender. Drain and gently shake the potatoes in the saucepan over low heat to dry them.
  • Preheat oven to 425°F. In a medium bowl, thoroughly mash potatoes until smooth. Add all ingredients except for 1 tablespoon of butter and the ginger. Beat vigorously until the potatoes are light and fluffy.
  • Scoop 1/2 cup of potato mixture onto ungreased cookie sheet to create 8 mounds. Alternatively, use a decorating bag to form 8 rosettes.
  • Drizzle the luscious melted butter over the potatoes before baking for around 15 minutes until they are steaming hot. Finish by generously sprinkling them with fragrant ginger.
