Sweet potato casserole with raisins, walnuts, and fluffy meringue topping.
Ingredients:
  • 6 cups peeled, cubed sweet potatoes
  • 4 eggs, separated
  • 0.25 cup butter, softened
  • 0.25 teaspoon salt
  • 0.25 cup raisins
  • 0.25 cup coarsely chopped walnuts
  • 0.25 cup sugar
Instructions:
  • In a large pot, simmer cubed sweet potatoes in water until tender, about 30 minutes. Drain and cool before using.
  • Preheat your oven to 350°F (175°C) and generously grease a 9x9 inch baking dish.
  • Combine the cooked sweet potatoes, egg yolks, butter, and salt in an electric mixer, and whip on high speed until smooth and creamy, about 3 to 5 minutes. Transfer the mixture to a baking dish, ensuring an even surface. Sprinkle raisins and walnuts over the top, gently pressing them into the sweet potatoes.
  • Whisk egg whites in a bowl until foamy for about 1 minute. Slowly add sugar and beat until meringue is glossy and forms soft peaks in 2-3 minutes. Spread the meringue over the casserole.
  • Bake until the casserole is heated through and the meringue is golden on top, approximately 30 minutes in the preheated oven.
