Sweet potato, feta and spinach turnovers recipe

Delicious vegetarian puff pastry parcels, perfect for a quick and tasty lunch or snack with just a few simple ingredients and flavorful herbs and spices.
Ingredients:
  • 2 small sweet potatoes
  • 100g baby spinach
  • 250g feta (see note)
  • 2 tsp crushed garlic
  • 1 tsp chopped fresh chives
  • 2.50 gm mixed spice
  • 2.50 gm sweet paprika
  • 3 1/2 sheets frozen puff pastry, just thawed
Instructions:
  • Preheat your oven to 180C (160C fan forced) and prepare 2 large baking trays by lining them with baking paper.
  • Slice the sweet potato into 1cm-thick slices. Submerge them in a saucepan filled with cold water. Bring to a vigorous boil and cook for 15 minutes until soft. Add the spinach for the last 2 minutes of cooking. Drain the vegetables.
  • Combine sweet potato, spinach, feta, and 1 egg in a bowl. Mash with a fork until almost smooth. Add garlic, chives, mixed spice, and paprika. Stir well to combine. Season to taste.
  • Whisk the remaining egg in a bowl using a fork. Cut each pastry sheet into 4 squares. Place heaped tablespoonfuls of the sweet potato mixture in the center of each square, leaving a 1cm border. Brush the edges with egg, fold the pastry over the filling, and press the edges to seal using a fork. Brush the tops with egg, transfer turnovers to the prepared tray, and repeat the process with the remaining ingredients.
  • Bake until golden, approximately 15 minutes.
