Delicious gnocchi in rich tomato sauce with Italian sausage and Romano cheese.
Ingredients:
  • 1 pound Italian sausage links
  • 0.5 cup onion, chopped
  • 1 tablespoon minced garlic
  • 1.5 teaspoons Italian seasoning
  • 1 (14 ounce) can crushed tomatoes
  • 2 tablespoons water
  • 1 teaspoon white sugar
  • 1 tablespoon Italian seasoning
  • 1 (1 pound) package fresh gnocchi
  • chopped fresh flat-leaf parsley, for garnish
  • grated Romano or Parmesan cheese
Instructions:
  • In a skillet over medium heat, warm up 1 tablespoon of olive oil. Cook sausages until golden and firm, approximately 10 minutes. Slice sausages into 1/2 inch pieces, put back in the skillet, and cook until fully cooked. Drain on a paper towel-lined plate.
  • Heat 1 tablespoon of olive oil in a saucepan over medium heat. Sauté onion until soft and translucent for about 5 minutes. Add garlic and 1 1/2 teaspoons of Italian seasoning; cook until garlic softens for about 2 minutes. Stir in crushed tomatoes, water, salt, sugar, and the remaining 1 tablespoon of Italian seasoning. Bring to a simmer, then cover and let it simmer on medium-low heat for 20 minutes.
  • 1. Bring a generously salted pot of water to a vigorous boil. Add the gnocchi and cook until they float, usually 2 to 3 minutes. Drain the pasta.
  • While the sauce is simmering, gently incorporate the Italian sausage slices to heat through. Mix the pasta with the sauce, then garnish with chopped parsley and grated Romano cheese before serving.
