Transform bland mashed potatoes into vibrant tomato-infused dinner rolls.
Ingredients:
  • 1 cup room temperature tomato juice
  • 0.5 cup lukewarm water (100 degrees F/38 degrees C)
  • 0.66666668653488 cup white sugar
  • 1.5 teaspoons salt
  • 1 (.25 ounce) package active dry yeast
  • 0.66666668653488 cup melted shortening
  • 1 cup mashed potatoes
  • 6 cups all-purpose flour, or as needed
Instructions:
  • In a large bowl, mix together the tomato juice, water, sugar, and salt until the sugar and salt dissolve. Sprinkle the yeast over the mixture, let it sit for 5 minutes until it softens and forms a creamy foam.
  • Combine eggs, shortening, and mashed potatoes, then incorporate flour to form a soft dough. Knead for 5 minutes until smooth and elastic. Place in a greased bowl, flip once for an even coat, cover, and refrigerate for at least 2 hours or overnight.
  • Prepare baking sheets by lining them with parchment paper. Set them aside.
  • On a lightly floured surface, shape the dough into 48 small balls. Arrange them 2 inches apart on the baking sheets, cover with a towel, and allow them to rise in a warm place until doubled in size, approximately 2 hours.
  • Preheat the oven to 375°F (190°C).
  • Bake the rolls in the oven until the tops turn a beautiful golden brown, for 12 to 15 minutes.
