Roti jala (lace crêpes)

Quickly cook the curry addition until just flexible and remove from pan before browning.
Ingredients:
  • 150 g plain flour
  • 1 large free-range egg
  • 120 ml light coconut milk
  • 1 pinch of ground turmeric
  • 50 ml vegetable oil
Instructions:
  • Combine all ingredients except oil with a pinch of sea salt and 200ml water in a bowl. Mix until smooth, then let the batter rest for 30 minutes. Lightly oil a large frying pan over medium heat. Use a roti jala mould or squeezy bottle to create a lacy spiderweb pattern in the pan with the batter. Cook for 20-30 seconds until slightly firm, then transfer to a board. Roll up and repeat with remaining batter. Serve when ready.
