Flaky, buttery Roti, a versatile side dish perfect for pairing with any curry.
Ingredients:
  • 375.00 ml wholemeal plain flour
  • 500.00 ml plain bread flour, sifted
  • 375.00 gm warm water
  • 50g butter, melted
Instructions:
  • In a large bowl, combine flours and salt, creating a well in the center. Pour in water and mix into a soft, sticky dough. Transfer dough onto a lightly floured surface and knead for 5 minutes until smooth. Place in a lightly greased bowl, cover with plastic wrap, and let it rest for 1 hour.
  • Prepare a large baking tray with a sheet of baking paper. Transfer the dough onto a lightly floured surface and divide it into 8 equal portions. Shape each portion into a 1cm-thick round and place them on the prepared tray. Cover with plastic wrap and let them rest for 15 minutes. Roll out each round on a floured surface using a rolling pin to form 22cm rounds.
  • Preheat a large, heavy-based frying pan over medium-high heat. Brush 1 roti with butter, cook butter side down until lightly browned and puffed, then brush the top with butter. Flip and cook until the other side is browned and puffed. Transfer to a plate, cover with foil, and repeat with the remaining roti and butter. Serve hot.
