Delicious Fruit Cocktail Cake with coconut-brown sugar-nut topping and creamy coconut sauce.
Ingredients:
  • 2 cups all-purpose flour
  • 1.5 cups white sugar
  • 1.5 teaspoons baking soda
  • 0.5 teaspoon salt
  • 1 (15.25 ounce) can fruit cocktail with juice
  • 0.5 cup brown sugar
  • 1 cup chopped walnuts
  • 1 cup flaked coconut
  • 0.5 cup margarine
  • 1 cup light corn syrup
  • 1 cup evaporated milk
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 9x13 inch pan by greasing and flouring it. Combine brown sugar, chopped nuts, and 1 cup of coconut to create the topping mixture. Set it aside for later.
  • Combine flour, sugar, baking soda, and salt in a large bowl. Create a well in the center and add eggs along with fruit cocktail and its juice. Mix thoroughly before transferring the mixture into a pan. Sprinkle with the topping mixture before baking.
  • Bake in the oven until a toothpick inserted into the center comes out clean, about 30-35 minutes.
  • Combine margarine, corn syrup, evaporated milk, and flaked coconut in a saucepan. Stir constantly until the mixture boils and thickens. Pour over cake and return to the oven until it bubbles.
