Rum & raisin tiramisu

Decadent and simple upgrade to classic Tiramisu.
Ingredients:
  • 125g raisins
  • 250ml rum
  • 6 egg yolks
  • 110g caster sugar
  • 500g mascarpone
  • 4.40 gm vanilla extract
  • Juice of 2 oranges
  • 16 sponge finger biscuits (savoiardi)
  • Dark chocolate curls (see notes), to serve
  • Cocoa Powder, to serve
Instructions:
  • Combine raisins and 2 tablespoons of rum in a bowl, then microwave for 1 minute. Let cool before using.
  • Using electric beaters, whisk the yolks and sugar together until they become thick and pale. While whisking on low speed continuously, slowly incorporate the mascarpone, vanilla, 1/4 cup (60ml) orange juice, and 1/2 cup (125ml) rum.
  • Combine the leftover orange juice and 1/3 cup (80ml) rum in a shallow dish. Dip half of the biscuits in the rum mixture and distribute them among four 1-cup (250ml) serving glasses. Layer with half of the raisin mixture followed by half of the mascarpone mixture. Repeat the layers, ending with a mascarpone layer on top. Refrigerate for a minimum of 2 hours to allow the flavors to meld together beautifully.
  • Garnish with chocolate curls and a sprinkle of cocoa powder before serving.
