Rum and raisin tiramisu

Impress your guests with a show-stopping rum tiramisu.
Ingredients:
  • 125g raisins
  • 250ml rum
  • 6 egg yolks
  • 110g caster sugar
  • 500g mascarpone
  • 185ml orange juice
  • 6.60 gm vanilla extract
  • 1 vanilla bean, split, seeds scraped
  • 24 sponge finger biscuits (savoiardi)
  • Shaved chocolate, to serve
Instructions:
  • Warm raisins and 2 tablespoons of rum in a pan over gentle heat until slightly heated. Allow to cool.
  • Whisk yolks and sugar until they're beautifully thick and pale. Stir in mascarpone, 1/2 cup (125ml) rum, 1/4 cup (60ml) orange juice, vanilla extract, and vanilla seeds. Next, mix the remaining 85ml rum and 1/2 cup (125ml) juice in a separate bowl.
  • Take 12 sponge fingers and dip them into the rum mixture. Arrange them in a single layer in a 1.5L trifle dish. Spread one-third of the mascarpone mixture on top, followed by half of the raisins. Repeat this step once more. Finish with a final layer of mascarpone. Cover the dish with plastic wrap and refrigerate for 6 hours. When ready to serve, sprinkle with chocolate.
