Heart-healthy tuna sandwiches - a quick and tasty seafood dinner option from Betty Crocker's cookbook. Ready in 20 minutes!
Ingredients:
  • 1 can (6 ounces) solid white tuna in water, drained and flaked
  • 3/4 cup chopped celery
  • 2 tablespoons finely chopped onion
  • 1/2 teaspoon grated lemon peel, if desired
  • 1/3 cup fat-free mayonnaise or salad dressing
  • 4 whole wheat English muffins, split and lightly toasted
  • 8 slices tomato
  • 1 cup shredded reduced-fat Cheddar or Monterey Jack cheese (4 ounces)
Instructions:
  • Preheat oven to 350°F. Combine tuna, celery, onion, lemon peel, and mayonnaise in a medium bowl.
  • Spread a generous amount of the flavorful tuna mixture onto each English muffin half, then delicately layer a fresh slice of tomato on top. Sprinkle a generous amount of cheese over each muffin half before placing them on a baking sheet.
  • Bake until the cheese is gooey and the sandwiches are piping hot, about 8 to 10 minutes.
