Indulge in a decadent Russian apple cake: layers of sour cream batter and apples nestled on a cheesy crust.
Ingredients:
  • 5.5 ounces farmer's cheese
  • 3.5 tablespoons unsalted butter, melted
  • 3 tablespoons milk
  • 2 tablespoons white sugar
  • 1.75 cups all-purpose flour
  • 1 (8 ounce) container sour cream
  • 4 apples, cored and thinly sliced
Instructions:
  • Mix together farmer's cheese, warm melted butter, and milk in a bowl until creamy and well blended.
  • In a separate bowl, combine 1 3/4 cups of flour, 2 tablespoons of sugar, and baking powder. Add this mixture to the ricotta mixture and mix until a pastry dough forms. Refrigerate for about 30 minutes until chilled.
  • Using an electric mixer, cream together 1/2 cup of sugar and eggs until thickened. Mix in sour cream, 2 tablespoons flour, and vanilla extract until well combined.
  • Preheat your oven to 350 degrees F (175 degrees C) and generously butter a 9-inch springform cake pan.
  • Evenly line the cake pan with the chilled pastry, adding half of the apples and half of the filling on top. Repeat the layers, finishing with the remaining filling.
  • Bake in the preheated oven for 45 minutes or until a toothpick inserted into the center comes out clean. Let cool in the pan before removing.
