Russian Apple Tart

Grandma's Russian apple tart: thin, crispy crust topped with sweet apples.
Ingredients:
  • 10 medium apples - peeled, cored, and thinly sliced
  • 1 medium lemon, zested and juiced
  • 0.5 cup walnuts, finely chopped
  • 1 teaspoon ground cinnamon
  • 0.5 cup white sugar
  • 1.25 sticks unsalted butter, softened
  • 1 large egg
  • 1.75 cups all-purpose flour
  • 0.33333334326744 cup apricot jam
  • 0.25 cup cognac
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a small cookie sheet.
  • Combine apple slices with freshly squeezed lemon juice in a bowl. In another bowl, mix lemon zest, walnuts, and cinnamon until well blended.
  • In a separate bowl, cream together sugar and butter. Add egg, then gradually mix in flour until dough is formed.
  • Gently press dough into thin layer on cookie sheet. Sprinkle walnut mixture evenly and press gently. Arrange apple slices on top.
  • Place in the hot oven and bake for 30 minutes.
  • Heat the apricot jam in the microwave or on the stovetop until it becomes liquid, for about 1 minute while the tart bakes.
  • Take the tart out of the oven, glaze with warmed jam, and bake until golden and set, for an additional 15 to 20 minutes.
  • For a flamboyant finish, ignite the cognac in a ladle using a match, then drizzle it over the entire tart. The flames will quickly disappear.
