Quick and delicious chicken and potato stew perfect for busy nights, pairs well with rice or noodles.
Ingredients:
  • 1 tablespoon butter
  • 1.25 pounds skinless, boneless chicken breast, cubed
  • 5 potatoes, peeled and cubed
  • 1 carrot, sliced
  • 1 onion, chopped
  • 1 tablespoon tomato paste
  • salt and freshly ground black pepper
  • water to cover
  • 1 bunch fresh parsley, chopped
Instructions:
  • In a large saucepan over medium heat, melt butter until sizzling. Add chicken and sear until golden brown all over, approximately 5 minutes. Toss in potatoes, carrot, and onion, sautéing until veggies start to tenderize, around 6 to 8 minutes.
  • Incorporate tomato paste into the saucepan, season with salt and pepper, add water to cover, and simmer until chicken is cooked through and vegetables are tender, about 15 minutes. Finish with a sprinkle of fresh parsley for garnish.
