Indulge in a decadent Russian Pashka dessert adorned with glace cherries for a delightful Easter celebration.
Ingredients:
  • 3 egg yolks
  • 215.00 gm caster sugar
  • 300ml cream, scalded (see notes)
  • 4.40 gm vanilla extract
  • 750g Cottage Cheese
  • 250g cream cheese, chopped, at room temperature
  • 250.00 ml glace fruit, finely chopped
  • 165.00 ml blanched almonds, finely chopped
  • Extra glace cherries or fruit, to serve
Instructions:
  • Create drainage holes in the bottoms of 12 plastic disposable cups. Cover the inside of each cup with a layer of cheesecloth that has been rinsed and squeezed dry (use 2 layers if using muslin).
  • In a bowl, beat egg yolks and sugar for 1 minute until creamy. Slowly whisk in cream until well combined. Transfer the mixture to a saucepan and cook over low heat, constantly whisking for 5-7 minutes until it coats the back of a spoon. Be careful not to boil. Remove from heat and place the saucepan in a bowl of ice water. Whisk the custard until it reaches room temperature, then stir in the vanilla.
  • In a large bowl, use an electric mixer to thoroughly combine the cheese. Stir in the cooled custard, then gently mix in the glace fruit and almonds.
  • Divide the mixture evenly among each cup and press down firmly. Cover with cheesecloth, place in a shallow dish, and weigh down with a small can of food. Refrigerate overnight.
  • Invert cups onto a large platter, delicately remove the cheesecloth, and garnish pashka with additional glace cherries or fruit, as desired.
