Rustic Cranberry-Apple Tart

Rustic yet elegant tart with walnut filling, topped with apple and cranberries.
Ingredients:
  • 1 (9 inch) pie crust
  • 2 cups chopped walnuts
  • 0.5 cup dark brown sugar
  • 2 eggs, divided
  • 0.25 cup butter, softened
  • 0.5 teaspoon vanilla extract
  • 1 (20 ounce) can apple pie filling
  • 0.5 cup dried cranberries
  • 1 tablespoon water
  • 1 tablespoon Demerara sugar, or as needed
Instructions:
  • Preheat the oven to a toasty 415 degrees F (210 degrees C) and prepare a baking sheet with parchment paper.
  • Lay out the pie crust on the baking sheet. Combine walnuts, brown sugar, 1 egg, butter, and vanilla extract in a bowl. Spread the walnut filling over the pie crust, leaving a 1-inch border. Set aside 2 tablespoons of the filling in the bowl.
  • Arrange apple slices in a beautiful circular pattern on top of the filling. Sprinkle cranberries over the apples, adding a pop of color and flavor. Scatter small spoonfuls of the reserved walnut filling sporadically over the apples. Fold the crust over the filling, ensuring it overlaps elegantly to create a charming rustic circle.
  • Prepare an egg wash by beating the remaining egg and water together. Brush the edges of the crust with the egg wash and then sprinkle Demerara sugar on top.
  • Bake in the oven until the crust is golden brown and the apples are bubbling, for around 30 minutes. Let it cool on a baking sheet for 30 minutes, then transfer the tart to a cooling rack using the parchment paper and let it sit for 1 hour.
  • Using a large knife or angled cake spatula, carefully loosen the tart from the parchment paper and transfer it to a serving tray.
