Create a cozy Hawaiian saimin with savory SPAM®, soba noodles, and runny eggs in a tasty broth.
Ingredients:
  • 8 cups water
  • 1 tablespoon kosher salt
  • 0.5 (12 ounce) package dried soba noodles (Japanese buckwheat noodles)
  • 1 (32 fluid ounce) container chicken stock
  • 1 tablespoon grated fresh ginger
  • 1 cup chopped fully cooked luncheon meat (such as SPAM(R))
  • 0.5 cup chopped green onions
  • 2 tablespoons soy sauce
  • 4 large eggs
Instructions:
  • In a large saucepan, bring salted water to a boil. Add soba noodles and cook for 3 minutes until al dente, stirring occasionally. Drain and rinse with warm water. Set aside.
  • In a small saucepan, gently simmer the stock and ginger. Lower the heat and add in the luncheon meat, green onions, and soy sauce. Cook and stir occasionally until everything is heated through, about 5 minutes.
  • Fill a pot with a generous 1 inch of boiling water. Gently add eggs, cover, and cook for exactly 6 minutes. Transfer eggs to an ice bath to cool rapidly. Finally, carefully halve the eggs lengthwise.
  • Portion out the soba noodles evenly into 4 bowls; generously ladle the flavorful broth and toppings over the noodles. Finish off with a velvety soft-cooked egg on top before serving hot.
