Indulgent pistachio and avocado cookies, a festive St. Patrick's day delight.
Ingredients:
  • 0.5 ripe avocado
  • 0.25 cup unsalted butter, softened
  • 0.5 cup applesauce (such as Mott's®)
  • 0.5 cup white sugar
  • 0.25 cup skim milk
  • 1 large egg
  • 2 (3.4 ounce) packages instant pistachio pudding mix (such as Jell-O®)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.66666668653488 cup pistachio nuts
  • 2 cups unbleached all-purpose flour
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare 3 baking sheets with parchment paper.
  • In a food processor, blend avocado until smooth. Mix in butter until creamy. Add applesauce, sugar, and milk; pulse to combine. Blend in the egg until smooth. Add pudding mix, vanilla extract, baking powder, and salt; pulse until dough is smooth and pastel green.
  • Crush pistachio nuts in a resealable freezer bag with a meat mallet. Mix crushed pistachios and flour into dough by pulsing until combined.
  • Spoon dollops of dough onto baking sheets, spacing them 2 inches apart, then gently flatten.
  • Bake in the preheated oven for 15 minutes until the bottoms begin to brown. Then, cool on baking sheets for 5 to 10 minutes before serving.
