Transform healthy salmon sandwiches for a crowd-pleasing twist.
Ingredients:
  • 8 Wholemeal bread slices, crusts removed
  • 1 small avocado, halved, stone removed, peeled
  • 5.30 gm fresh lemon juice
  • 1 x 210g can red salmon
  • 50g alfalfa sprouts
Instructions:
  • Flatten bread slices using a rolling pin.
  • Combine the ripe avocado and fresh lemon juice in a bowl, then gently mash with a fork until creamy.
  • Transfer the red salmon to a bowl and delicately flake it with a fork until finely mashed.
  • Spread the creamy avocado mixture on the bread, layer with smoked salmon, arrange a line of fresh alfalfa sprouts down the middle, then carefully roll it up tightly to seal in all the delicious flavors. Press down gently with the seam side down and cut in half before serving.
