Delectable avocado paired with succulent salmon, briny capers, and zesty lemon for a flavor explosion.
Ingredients:
  • 400g linguine
  • 63.70 gm olive oil
  • 3 skinless salmon fillets, pin-boned
  • 1 garlic clove, finely chopped
  • 1 small fresh red chilli, thinly sliced
  • 2 avocados, halved, stones removed, peeled, coarsely chopped
  • 50g (1/4 cup) drained capers, rinsed
  • 42.00 gm fresh lemon juice
  • 1 tsp finely grated lemon rind
Instructions:
  • Boil the pasta in a generous amount of salted water until perfectly cooked. Then, drain the pasta.
  • Heat 2 teaspoons of oil in a hot frying pan. Sear the salmon for 3-4 minutes on each side until it easily flakes with a fork. Transfer to a plate and cover to stay warm.
  • Heat the remaining oil in the pan over medium heat, then sauté the garlic and chili for 30 seconds until fragrant.
  • Break up the salmon into large flakes. Mix the salmon, chili mix, avocado, capers, lemon juice, and lemon zest with the linguine. Toss until well combined. Portion into serving bowls and season with salt and pepper to taste.
