Salmon and bean sprout omelette

Whip up a quick, delicious and healthy salmon frittata with veggies!
Ingredients:
  • 1 210g can red salmon, drained, skin and bones removed
  • 6 eggs
  • 4 green shallots, finely sliced
  • pinch salt
  • 20g (1 tbsp) butter
  • 90g (1 cup) bean sprouts
  • 62.50 ml fresh coriander leaves
Instructions:
  • Roughly chop the salmon into small pieces and set aside. In a mixing bowl, lightly beat the eggs with a fork. Stir in the chopped green shallots and salt until well combined.
  • In a medium frying pan over high heat, sizzle the butter until it's hot. Lower the heat to medium-low and pour in the egg mixture. Use a wooden spoon to gently stir until the eggs start to set. Let it cook without stirring for 3-4 minutes until the omelette is nearly set and golden underneath.
  • Sprinkle salmon, bean sprouts, and coriander over one side of the omelette. Carefully fold the omelette in half using a spatula, then transfer it onto a serving plate. Serve right away.
