Elevate salmon with flaky filo pastry for a show-stopping gourmet meal.
Ingredients:
  • 27.30 gm extra virgin olive oil
  • 20.00 ml fresh basil, chopped
  • 20.00 ml mint leaves, chopped
  • 20.00 ml flat-leaf parsley, chopped
  • Grated zest of 1 lemon
  • 4 sheets filo pastry
  • Olive oil spray
  • 4 x 180g skinless salmon fillets, pin-boned
  • 500g vine-ripened cherry tomatoes
  • 200g green beans, trimmed
Instructions:
  • Preheat your oven to 200°C and prepare a baking tray by lining it with baking paper.
  • In a bowl, mix together oil, garlic, herbs, lemon zest, salt, and pepper.
  • Place 1 sheet of filo pastry horizontally on a board with a short side closest to you, ensuring to cover the remaining sheets with a damp tea towel.
  • Gently mist the filo sheet with oil, then lay a salmon fillet at the closest edge to you, keeping a 3cm border.
  • Coat the fish with the herb mixture, encase it in pastry by folding the edges and rolling away from you. Repeat to create 4 parcels, then top with a light spray of oil. Bake for 12 minutes until golden and fish is cooked. Bake tomatoes separately for 5 minutes until softened.
  • Blanch beans in boiling water until tender, then drain.
  • Plate the salmon parcels and serve alongside the roasted tomatoes and beans.
