Marinate salmon slices in tangy citrus, fresh cilantro, and garlic for four hours to create a flavorful salmon ceviche. Serve with chips, rice, or tortillas.
Ingredients:
  • 0.25 teaspoon white sugar
  • 2.5 tablespoons sea salt
  • 0.5 teaspoon chili paste or sauce
  • 0.25 cup fresh lime juice
  • 0.25 teaspoon fresh ground pepper
  • 0.25 teaspoon cumin
  • 0.25 cup extra virgin olive oil
  • 1 clove garlic, minced
  • 0.25 cup minced red onion
  • 1 ripe tomato, finely diced
  • 2 tablespoons minced fresh cilantro
  • 1 pound very fresh salmon fillets (sushi-grade preferred), thinly sliced
  • 1 avocado, sliced
Instructions:
  • In a spacious glass or plastic bowl, blend sugar, salt, and chili paste with lime juice. Add pepper and cumin for seasoning. Mix in olive oil, garlic, onion, tomato, and cilantro. Carefully fold in salmon, cover, and refrigerate for 4 hours.
  • Remove excess liquid from the salmon, gently fold in avocado slices, and let it sit at room temperature for 15 minutes before serving.
