Salmon Fried Rice

Transform leftovers into delicious Salmon Fried Rice with veggies for a quick and healthy dinner.
Ingredients:
  • 3 tablespoons soy sauce
  • 1 teaspoon brown sugar
  • 1 tablespoon extra virgin olive oil
  • 2/3 cup diced red onion
  • 2/3 cup diced red bell pepper
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 3 eggs, well beaten
  • 4 cups day old cooked white rice (from about 2 cups of raw rice)
  • 1 cup frozen peas, thawed
  • 2 cups cooked salmon in large chunks
  • 2 green onions, thinly sliced, including the greens
  • Cilantro (or parsley) for garnish
Instructions:
  • Combine the brown sugar and soy sauce in a small bowl until the sugar is dissolved. Keep it aside.
  • In a large saute pan or wok over medium-high heat, heat olive oil. Cook red onion and bell pepper until lightly browned for about 5 minutes. Reduce heat to medium and add garlic and grated ginger, cooking for an additional minute.
  • Combine the beaten eggs with the rice in the pan. Stir until the eggs are just cooked. Increase heat to medium-high, add the cooked rice, and stir frequently for a couple more minutes.
  • Combine the peas, salmon, and green onions into the mixture carefully. Stir in the soy sauce blend and take it off the heat. Serve promptly with a sprinkle of fresh cilantro on top.
