Salmon with broad beans & parsley oil

Elevate fresh salmon with a simple and elegant preparation.
Ingredients:
  • 20.00 ml finely chopped flat-leaf parsley, plus extra leaves to garnish
  • 80ml olive oil
  • 400g podded broad beans (fresh or frozen)
  • 200g fresh peas or frozen peas
  • 4 x 180g skinless salmon or ocean trout fillets, split through the centre into 2 thin fillets
  • 1 lemon, quartered
Instructions:
  • Place the baking tray in the preheated 200C oven.
  • Mix the fresh parsley with 1/4 cup (60ml) of oil, add seasoning to taste, and let the flavorful parsley oil sit aside for later use.
  • Boil beans and peas in water for 3 minutes until tender, then drain. Peel outer skin of beans once cool. Mix vegetables with parsley oil and keep warm.
  • Brush the salmon with the remaining oil, season it, and place it on the lined hot tray. Bake for 3 minutes, or until cooked yet still pink in the center.
  • Garnish with parsley and lemon wedges, and serve alongside fresh vegetables.
