Creamy salmon gnocchi

Transform your kitchen into an Italian eatery with a dish of crispy salmon, pillowy gnocchi, and flavorful broad beans.
Ingredients:
  • 18.20 gm olive oil
  • 2 (about 400g) skinless salmon fillets
  • 1 x 500g pkt potato gnocchi
  • 1 garlic clove, crushed
  • 150g (1 cup) frozen broad beans, thawed, peeled
  • 190g (3/4 cup) light sour cream
  • 20.00 ml chopped fresh dill
Instructions:
  • Preheat a large frying pan over medium heat. Gently coat the salmon with oil and sear for 4 minutes on each side for medium doneness, or until cooked to your preference. Serve on a plate.
  • Boil the gnocchi in salted water as per package instructions until al dente, then drain.
  • Break up the salmon into big chunks. Heat a pan over medium heat. Throw in the garlic and broad beans and sauté for about 30 seconds until fragrant. Toss in the gnocchi, salmon, and sour cream, mix well. Cook for 2 minutes until hot. Sprinkle with dill and dish up to serve.
