Roasted salmon topped with caramelized leeks and matchstick carrots - elegant and delicious.
Ingredients:
  • 4 leeks
  • 2 tablespoons butter
  • 1 tablespoon brown sugar
  • 3 carrots, cut into matchsticks
  • kosher salt to taste
  • 2 pounds salmon fillets
  • kosher salt and ground black pepper to taste
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) while you line a baking sheet with foil and give it a nice spritz of cooking spray.
  • Prepare the leeks by trimming off the root end, tough outer leaves, and dark green tops. Slice the leeks lengthwise into quarters, then chop crosswise into thirds. Thoroughly wash the leeks to remove any grit, then let them drain in a colander.
  • In a large skillet over medium-high heat, melt butter and sauté leeks until they begin to soften, for about 5 minutes. Add brown sugar and caramelize the leeks for 15 to 20 minutes. Then, toss in matchstick carrots, season with kosher salt, and cook until carrots are tender, for about 5 minutes.
  • Lay the salmon on the baking sheet, coat with olive oil, and season with salt and pepper. Roast until the flesh is tender and moist, approximately 10 minutes per inch thickness. Serve the cooked fillets on plates, topping each with a quarter of the caramelized leeks and carrots.
