Salmon with Mint Sauce

Salmon fillets elevated with bright citrus zest and a luscious mint sauce.
Ingredients:
  • 3/4 cup plain fat-free yogurt
  • 1 tablespoon chopped fresh or 1 teaspoon dried mint leaves
  • 1 tablespoon fat-free mayonnaise or salad dressing
  • 1 tablespoon grated orange peel
  • 1 1/2 lb salmon fillets, cut into 8 serving pieces
  • 1 teaspoon grated lemon peel
Instructions:
  • Combine yogurt, fresh mint, creamy mayonnaise, orange zest, and minced garlic in a small bowl until fully combined. Chill covered in the refrigerator for at least 1 hour, but no longer than 2 days.
  • Preheat the oven to broil. Grease the broiler pan rack with cooking spray. Season salmon with lemon zest, salt, and pepper. Place the salmon on the prepared rack in the broiler pan.
  • Broil the salmon until it flakes easily with a fork, about 5 to 6 minutes, keeping it about 4 inches from the heat source. Serve with sauce.
