Salmon with parsley salad

Quick and easy weeknight salmon dish bursting with fresh flavors. Ready in under 20 minutes!
Ingredients:
  • 36.40 gm lemon-infused extra virgin olive oil
  • 4 (about 120g each) salmon fillets, skin-on
  • 250.00 ml flat-leaf parsley leaves
  • 500g cherry tomatoes, halved
  • 2 spring onions, thinly sliced
Instructions:
  • Preheat a large non-stick frying pan over medium-high heat. Lightly drizzle half of the oil over the salmon skin. Cook the salmon skin-side down for 3-4 minutes. Flip and cook for an additional 3 minutes for medium doneness or until desired level of doneness. Season to taste.
  • Combine fresh parsley, ripe tomato, and crisp spring onion in a bowl. Drizzle with the remaining flavorful oil, season to perfection, and serve with the succulent salmon.
