Salmon with rocket & lentils

Ingredients:
  • 4 (about 200g each) portions salmon fillets
  • Salt & freshly ground pepper
  • 4 tomatoes, chopped
  • 2 x 400g cans lentils, rinsed, drained
  • 80g baby rocket leaves
Instructions:
  • Heat up a chargrill or large frying pan over medium-high heat. Brush both sides of the salmon with 2 teaspoons of oil, then season generously with salt and pepper. Cook the salmon for 3 minutes on each side, or until it reaches your desired level of doneness.
  • In a large non-stick frying pan over medium-high heat, heat the remaining oil. Sauté garlic and tomatoes for 3-4 minutes until tomatoes soften. Add lentils and season generously with salt and pepper. Mix in rocket leaves before serving.
  • Spoon the lentil mixture onto plates, add the salmon on top, and serve with lemon wedges.
