Garlic salmon with rocket and minted peas recipe

Whip up a quick and wholesome meal with garlic salmon, minted peas, and salad in just 15 minutes.
Ingredients:
  • 240g pea
  • 13.80 gm extra virgin olive oil
  • 4 Skin-On Salmon Portions
  • 50g butter
  • 2 garlic cloves, crushed
  • 125.00 ml mint leaves, torn
  • 120g creme fraiche
  • 120g pkt Baby Rocket
  • 42.00 gm lemon juice
Instructions:
  • In a large non-stick frying pan, heat oil over high heat. Place salmon in the pan, skin-side down. Lower to medium-high heat and sear for 2 minutes until skin is crispy. Flip salmon and reduce heat to low. Add butter and garlic, spooning butter over the salmon for 1 minute. Season to taste.
  • In a medium saucepan of boiling water, quickly cook peas for 2 minutes until heated through. Drain well, then mix with mint and 2 tablespoons of crème fraîche in the same pan. Combine everything well and season to taste.
  • In a medium bowl, gently toss together the arugula and lemon juice. Place the pea mixture on serving plates, season to taste, then place the salmon on top followed by the arugula mixture. Serve with the extra crème fraîche on the side.
