Salmon wrapped in filo

Ingredients:
  • 4 x 180g salmon fillet portions
  • 6 sheets filo pastry
  • oil spray
  • salt and cracked black pepper
  • lime wedges, to serve
Instructions:
  • Preheat your oven to 180°C and line a baking tray with non-stick baking paper.
  • Halve the salmon fillets lengthwise and carefully remove any bones with tweezers.
  • Lay 3 pastry sheets on a flat surface, gently covering them first with a clean tea towel and then a damp one to keep the filo moist and pliable.
  • Lay 3 pastry sheets on a flat surface. Lightly spray 1 sheet with oil, then layer the other 2 sheets on top, spraying each layer. Sprinkle salt and pepper on the top sheet. Cut the stack into 4 even strips using a sharp knife.
  • Lay a piece of salmon lengthwise on a pastry strip and roll it up, trimming excess pastry to match the salmon's length. Repeat with the remaining salmon and pastry sheets.
  • Arrange the salmon wraps on the baking tray with the seam side facing down. Bake for 5 minutes until the center is medium pink and the pastry is crisp, or adjust baking time to your preferred doneness.
  • Take out of the oven and allow to cool for a minute. Serve by cutting each wrap in half and serving with lime wedges.
