Salt & Pepper Dinner Rolls

Sweet and savory dinner rolls that are irresistibly soft and perfect for bread lovers.
Ingredients:
  • 4 cups Gold Medal™ Organic All-Purpose Flour
  • 1 package active dry yeast
  • 1 cup + 1 Tbsp. milk
  • 1/3 cup unsalted butter
  • 1/3 cup sugar
  • 3/4 tsp. salt
  • 2 large eggs, lightly beaten
  • Fleur de Sel & freshly ground black pepper for topping
Instructions:
  • Mix the flour and yeast in a stand mixer with the paddle attachment until well combined.
  • Combine 1 cup of milk, butter, sugar, and salt in a small saucepan over low heat until it reaches 120-130°F. Stir occasionally to dissolve the sugar, then add this mixture to the flour-yeast mixture with the eggs.
  • Begin by gently combining the mixture on low speed, then gradually increase to high speed and beat for 1 minute. Switch to the dough hook and knead on low speed for 7 minutes until the dough is smooth and elastic. Place the dough in a buttered bowl, ensuring it is coated all around, cover, and let it rise in a warm area for 1 hour.
  • After punching down the dough, transfer it to a lightly floured surface. Divide it in half, cover, and let it rest for 10 minutes. Meanwhile, generously butter two baking pans.
  • Divide each dough half into 12 equal pieces, shaping them into smooth balls by tucking any corners or edges underneath. Arrange them in the baking pans, cover, and let them rise for about 30 minutes or until they double in size. While waiting, preheat the oven to 375°F.
  • Using a pastry brush, gently coat the puffy dough's tops with milk, then sprinkle with Fleur de Sel (or similar flaky sea salt) and freshly ground black pepper. Bake the rolls for 18-22 minutes until they turn a beautiful golden brown. Enjoy them warm.
