Golden dumplings drizzled with sweet and salty caramel sauce, ideal for a cozy night.
Ingredients:
  • 150g (1 cup) self-raising flour
  • 40.00 gm caster sugar
  • 40g butter, chilled, chopped
  • 60ml (1/4 cup) milk
  • Large pinch of sea salt flakes
  • Vanilla ice-cream, to serve
  • Custard, to serve
  • 185ml (3/4 cup) golden syrup
  • 100g (1/2 cup, firmly packed) brown sugar
  • 50g butter
  • 185ml (3/4 cup) thickened cream
Instructions:
  • Preheat the 3L slow cooker on High with the lid on. In a bowl, mix flour and sugar, then rub in butter until mixture resembles breadcrumbs. Make a well, add milk, and stir with a knife until just combined. Divide into 12 portions and gently roll into balls.
  • In a saucepan over medium-low heat, melt together golden syrup, sugar, butter, cream, and 125ml (1⁄2 cup) water. Stir until sugar dissolves and the syrup is smooth. Bring to a boil, then remove from heat.
  • - Pour half of the syrup into the preheated slow cooker, then gently place the dumplings in the syrup. Pour the rest of the syrup over the dumplings. - Cook covered for 1 1/2 hours until the dumplings are fully cooked. - Sprinkle with sea salt flakes and serve with ice cream and custard.
