Try a delicious fusion of a cheese toastie and classic Italian dish for a quick and satisfying meal - a must-try for lunch or dinner!
Ingredients:
  • 4 (80g each) uncrumbed veal schnitzels
  • Salt and pepper, to season
  • 9.20 gm olive oil
  • 8 slices white sourdough bread, 1cm-thick
  • Butter, for spreading
  • 82.50 gm tomato chutney
  • 120g fresh mozzarella, sliced
  • 125.00 ml semi-dried tomatoes
  • 12 fresh sage leaves
  • 8 slices prosciutto
  • 9.20 gm oil, for frying
  • 20g butter, for frying
Instructions:
  • Season veal generously with salt and pepper. In a hot frying pan, add 2 tsp of olive oil and sear veal for 30 seconds on each side. Place the cooked veal on a plate, cut in half, and cover to keep warm.
  • Spread a layer of butter on the bread slices. Place 4 slices on a work surface with the buttered side down. Add tomato chutney, veal, mozzarella, and semi-dried tomatoes, then top with the remaining bread slices with the buttered side up. Place sage leaves on top of each sandwich. Wrap 2 pieces of prosciutto around each sandwich and secure with toothpicks.
  • In a hot frying pan, melt 2 tsp of oil with 20g of butter over medium heat. Cook until golden and crisp, about 2 minutes on each side and 1 minute on each edge. Finally, slice in half.
