Santa Fe-inspired breakfast casserole blending traditional morning favorites into a flavorful masterpiece.
Ingredients:
  • 4 cups frozen southern-style hash brown potatoes
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1 cup fresh or frozen whole kernel corn
  • 1 cup frozen stir-fry bell peppers and onions, from 1-pound bag
  • 2 cups shredded Colby-Monterey Jack cheese (8 ounces)
  • 2 tablespoons chopped fresh cilantro
  • 8 eggs
  • 1/4 teaspoon ground red pepper
Instructions:
  • Prepare a baking dish by generously spraying it with cooking spray. Combine potatoes, beans, corn, stir-fry peppers, and onions in the dish. Top the mixture with cheese and fresh cilantro before baking.
  • Whisk together eggs, milk, salt, and red pepper until smooth. Pour mixture evenly over the potatoes. Cover and chill in the refrigerator for at least 2 hours, but not more than 24 hours.
  • Preheat the oven to 350°F. Bake the dish uncovered for 55 to 60 minutes until the center is set. Allow it to rest for 5 minutes before serving.
