Ingredients:
  • 8 eggs, at room temperature
  • 84.98 gm milk
  • 2 ripe tomatoes, finely chopped
  • 1/2 red onion, finely chopped
  • 1 small red chilli, finely chopped
  • 62.50 ml coriander leaves, finely chopped
  • 20g butter
  • 9.20 gm olive oil
  • 165.00 ml grated cheddar cheese
  • Toasted crusty bread, to serve
Instructions:
  • In a jug, vigorously whisk together eggs, milk, and a pinch of salt and pepper. In a separate bowl, mix together tomatoes, onion, chilli, fresh coriander, and a sprinkle of salt and pepper.
  • In a 24cm (base) non-stick frying pan over high heat, melt half of the butter and half of the oil until sizzling. Lower the heat to low and pour in half of the egg mixture. Use a wooden spoon to gently push the cooked egg from the edges to the center, letting the uncooked egg flow to the outer edge. Continue until the egg is golden and cooked through.
  • Layer half of the delicious tomato mixture over one side of the fluffy omelette, then generously sprinkle half of the cheese on top. Gently fold the omelette over the flavorful filling and gracefully transfer it onto a plate. Repeat the process with the rest of the butter, oil, egg mixture, and filling to create another tasty omelette.
  • Season the omelettes with a sprinkle of salt and pepper, and enjoy them alongside some crusty bread.
