Roasted Santa Fe Hatch chiles transformed into a flavorful green sauce with garlic, beef broth, and a hint of flour.
Ingredients:
  • 6 ounces Hatch chile peppers, halved and seeded
  • 3 tablespoons corn oil
  • 1 cup chopped onion
  • 2 teaspoons minced garlic
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 teaspoon salt
Instructions:
  • Preheat broiler with oven rack positioned 6 inches from heat source.
  • Prepare a baking sheet by lining it with aluminum foil. Arrange the chile peppers on the sheet with their cut sides facing down.
  • Place the dish in the preheated oven and broil until the skin is heavily blistered and turning black, approximately 4 minutes per side.
  • Place the chile peppers in a bowl and seal them with plastic wrap to steam for 15 minutes as they cool. Then, peel and chop the chile peppers.
  • In a saucepan over medium heat, sauté onions until browned, about 5 minutes. Add garlic and cook for another 2 minutes. Mix in flour until thickened. Add chopped chile peppers, beef broth, and salt. Bring to a boil, then simmer for 10 minutes to meld flavors.
